Crispy potato pancakes!
I used to avoid potatoes and starchy stuff on paleo but now I don’t. With the potatoes I try to always eat them peeled to eliminate the vast majority of what can be problematic with potatoes (since they’re nightshades and I’m dealing with an autoimmune form of hypothyroidism).
